some of the scenes of the movie make me think that Fury Road was made clearly with 3D in mind... So I'll see it in 2D & 3D...

You're right, it was planned as a 3D movie but it was converted to 3D in post because cameras were too heavy to film it natively. I'd rather watch it in 2D anyway.

In the UK there are few options to see it in 2D initially, bit diappointed as I find it gimmicky and distracting,

Saw it in 3D tonight and it was quite spectacular. The 3D worked quite well for a lot of the action scenes.

I can't do 3D and I tried(Comin' at ya!) and I tried(Jaws3D) and I tried(Beowulf) and I tried(A Christmas Carol) and I tried(Avabore).

I just can't/won't/shan't do 3D, NOT one more time.

So immersive enough as a film to not make you sit there thinking "i wish this was in 3D" every so often?

Wow, it's true. Miller prefers the 2D version of his film. Pretty much confirmed by Drew McWeeny.
