Not really a 'line' as such, but I loved Max's response after he asks Furiosa "where is this green place?"

After she answers "a hard days ride east", Max grunts and looks out the window - like he is saying "bullshit, but anyway".

If you blink, you miss it.

I loved that. It was one of few moments in Fury Road that made me think of older, experienced, "Mel's" Max. Or John Rambo Max perhaps. :)
He's been around the block and seen all there is, driven tankers, crossed deserts, etc. No hope.
But on the other hand, at least Furiosa is driving away from Joe, so he plays along.

Second moment is when Valkyrie plays the victim and he casually goes: "Well, that there - is a bait..."
It's like besides all the shit wasteland has thrown at him, Max also knows all Hollywood movie tropes. :D

So many good lines in FR.
But to name one:

Max: Confacimus! Just how he said it  Just makes you want to swear in Latin.

Vuvalini Warrior in Rear Defender on War Rig: One man, one bullet.

Not only conserving limited ammunition, such a tactic can reduce morale in an enemy.
