Or hearing protection, it's standard Australian OH&S to use hearing protection around loud noise sources for prolonged periods of time. In this case I could imagine some of those monster V8's throw out some magnificent sound pressures.

But I can't help but wonder why those cubes are stacked up like a gate entrance, especially since the driver just makes it between them.

I thought it was a BTS shot with a big fan behind him so ear pro does make more sense.

What I didn't include was that they would be in during vehicle maneuvers and resettings most likely, out during takes as they would have most vehicles off to track vocal sounds better. There IS logic here, I assure you!

But I can't help but wonder why those cubes are stacked up like a gate entrance, especially since the driver just makes it between them.

I just had a look at this and it's could be one of two things.

-It could be a reusable test stunt rig for practicing the maneuvers to get the stunt right for the 'one big shot' that they want to gt totally right rather than cross their fingers on. As you could see, the whole frame is basically a lightweight metal skeleton which may only take superficial damage in the test runs and can be reused will little repair time. Kinda like a Mechano truck or something. The cubes are there to represent a real set obstacle for the final shoot also, can easily be restacked for another take and you're not destroying set pieces.

OR

It's a massive motion capture set where they wreck a CG rig and CG set pieces so it can be reused if needed, the skeletal truck just being the physical tracking body.

It's the first option mate. In the original Instagram link, the user who posted the video says it was a stunt test to make sure everything would go as planned before using the actual vehicle that "one big shot". They were all standing there filming it with their phones.

Well that's what interests me as there's a puff of smoke at the front of the tailer, it disconnects and the tractor unit makes it between the 'gate posts'.

Looks to me like this whole stunt has gone as planned, which intrigues me as to how it will come about in the movie.
