Fast & the Furious have tons of references and nods to Mad Max. Most notable being Vin Diesel taking out a sawn-off shotgun and getting into his interceptor like car.(I don't know much about cars).
South Park's "Passion of the Jew" episode has Mel Gibson spouting lines from Mad Max and driving the tanker from MM2. They also have a Road Warrior or Street Warrior poster in one of the boy's rooms.
The Simpsons has tons of Mad Max references too.

Just saw Turbo Kid. Large metal jug of clean water painted in the same color of the MPF yellow falcons. Not sure if anyone saw the movie or caught that?

I'm not sure if it's been mentioned yet, but in the movie Watchmen part of the finale has a video wall of CRT TVs (because it's set in an alternate 1985), and on it MM2 is playing right between the antagonist and the video feed of his master plan

I turned on one of the new episodes of the Simpsons over the holidays last month and straight away its a scene about getting on a plane in the future where a load of Road Warrior looking bandits get on and start eating dog food.

Not only do you wander around a post-nuclear wasteland with a dog in fallout, one of the earliest suits of armor you get is a leather jacket just like max's as it appears in the road warrior. There is a sawed-off shotgun too.
One i particularly enjoy is the end of weird science, when vernon wells shows up leading a gang of mutant bikers, playing a sort of alternate version of wez*.
*I say alternate because he does actually hold a conversation, instead of just going into berserker mode on the two kids!

There's a old anime from the mid 80s called "fist of the North Star" set in post apocalyptic setting and a lot of characters have road warrior style clothing.
